You could try to set the character set to ISO 8859-2, it includes as well
polish as french characters. As I know. The 1250 windows encoding isn't
widely used in Poland. Please drop me a line if you solve Your problem. I
will be writing some pages using polish and french too (within a month or
so), so I will have to solve the same problem too.
